How to make chicken biryani
Marinate the chicken : Mix chicken with all marinade ingredients.keep it for 30minutes to 1 hour.
Prepare the rice : wash and soak basmati rice for 20-30 minutes.
Heat oil+ghee in a heavy -bottomed pot.add the whole spices.
Add sliced onions and fry until golden brown.you can reserve some fried onions for garnishing.
Add green chillies and ginger-garlic paste.fry until the raw smell disappears.

Add tomato and cook until soft.
Add the marinated chicken and cook on medium heat for about 8-10 minutes stiring occasionally.
Add soaked rice and gently mix.
Add water.for most basmati rice, use approximately half cup water for every 1 cup rice, but adjust accordingly to your rice and the amount of liquid already released by the chicken .
Add salt, mint and coriander . Bring to a boil.
Cover tightly and cook on low flame for 15-20 min, until the rice is cooked and the chicken is tender.
Turn off the flame and let it rest covered for 10min.
Gently fluff the biryani. Add fried onions, coriander, mint and saffron milk on top.
Serve hot with onion raita, boiled egg and salad.
